Your favorite traditional dishes from where you are

I like dinuguan, which is a native Filipino pork blood soup / stew. It's a mix of pork blood, bite-size strips of pork, vinegar, ginger and peppers. A lot of restaurants serve this with a lot of fatty portions. But, I only eat homemade, where I only use lean cuts of pork and skim off the fat that rises at the top.

Here in India, every region/state had its traditional dish, and I am living in the middle of the country so, I have the opportunity to taste the especial food of each state. Like
- Makke ki roti, Sarso ka saag
- Dal, Bati, Churma
- Rice & Rasam
- Puranpoli
and so on.

zhaliang - fried dough wrapped in noodles with sesame paste or hoisin sauce
zhengshuidan - steamed eggs with scallion & mushroom soy sauce
congee with shredded tofu & hundred year old eggs
baobing - like a Chinese burrito, great with chilli paste or hoisin sauce
youtiao - fried dough, like hush puppies
kailan - a green spinach type vegetable with ginger & garlic
Filipino
-Adobo ( chicken or pork with soy sauce and vinegar)
-Sinigang (sour soup with shrimp or pork with leafy veggies)
Italian
-MArgherita and Calzone pizza
-Seafood Marinara

Taking notes...now i now which foods to order rather than doing it blindly :-)
I love the sichuan style food here especially the sauteed spicy eggplant in claypot. Another one is the hotpot
in my place, i like Biryani (rice with chicken with a dozen aromatic, not hot spices).
in Sudan, i like fla fel.
I actually have two favorites here in Brazil; the first certainly is not to everybody's taste, but it is the best dish I've ever eaten. Feijoada is a traditional Brazilian dish that was created by the slaves during colonization. It is made of black beans, garlic, bay leaf, onion, jerk beef, two kinds of sausage, pig's feet, ears and tails (optionally). The dish is served with rice, refried kale leaves that have been shredded, orange slices, deep fried pork rinds, and a vinagrette of onion/tomato/green pepper. Of course it is almost obligatory to serve a frosty cold beer along with this dish......... life doesn't get better than this.
The other favorite traditional dish here is Churrasco (barbecue) various cuts of beef, chicken wings or drumettes, sausage and depending on the region it can include other things too. One of my favorite is grilled pineapple with cinnamon. Traditionally served with a potato salad or a chicken salad, rice and vinagrette...... delicious in anybody's language.

I have so many favorites here, where shall I start.
Mansef is the national dish of Jordan but I don't like it, so I say Musaghan, a national dish of Palestina.
At the bottom is a crispy special bread with olive oil.
On the bread are boiled chickenpieces and covered up with lots and lots of union and summak and roasted pine nuts. Summak is a red spice that taste like lemon. A few minutes in the oven under the grill until the chicken has a nice colour. Very very yummie!
Then I like also biriyani, kepse (from SA) sambosak (bread stuffed with spinach, union and lots of lemon), stuffed veggies like cabbage, wineleaves, zucchini. And last but not least kubbeh. These are balls made from bulgur and stuffed with meat, pine nuts and herbs.
I'm extremely lucky as my wife is a fantastic cook.
Lunch was a less than traditional Indonesian chicken soup but with an Indonesian twist of added spices.
At the moment, I can smell fried rice (Very Indonesian) being lovingly cooked.
It's bound to be lovely and, bonus, spicy as the devil's bum burps.
My favorite is fried rice with Chinese sausage"

with a little help from the seasoning packages out the Netherlands.
I make by myself atjar, seroendeng, sambal and kroepoek from the store here.

It depends how often they wash the dishes. If it's been a while, you get a nice blend of old flavors.
I live in Almaty now and I love:
Pilau = rice+meat dish
manty = pastry with meat inside
All Kazakh cuisine is tasty but definitely too greasy for me
When I used to live in Germany I enjoyed all kinds of sausages and huge variety of soft cheeses....mmm...delicious
