Meat in Tajikistan is probably some of the worst I have come across, the butchers if you can call them that, have no concept of what cuts of meat are and tend to just hack the animal up in to pieces and sell it in lumps. So my advice is, buy a slow cooker and bring it with you the next time you are in civilisation. Beef here can take up to and over 6 hours in a slow cooker to make it edible and not resemble boot leather, Mutton 4-6 hours seems to do the trick. If your a fan of curry, then try to bring spices with you also as they are difficult to find, whole Cardamon and Cumin, Corriander in powder form are useful, Pataks Curry paste is and essential.
