we are now in the process of choosing windows and doors for our new construction, any suggestions? 1 pane? 2 pane? aluminum? vinyl? PVC? argon gas?

Depends, if the room will be air conditioned go for dual pane. You probably want security doors and windows, they are all thick glass usually double pane. Not sure argon makes that much of a difference. I would suggest aluminum less chance of warping over time.
